INGREDIENTS
3 cups cooked rice
1 cup diced celery
1 cup chopped snow peas
4 hard boiled eggs, chopped
2 finely sliced green onions
1 large cooked boneless skinless chicken breast, cubed
1 small shrimp ring (about 2 cups)
Dressing
1/2 olive oil
3 Tbsp soy sauce
2 Tbsp white vinegar
2 tsp curry powder
1/2 tsp salt
1/2 tsp celery seed
chicken was baking so not in picture |
Stir all salad ingredients together. Mix dressing ingredients together. Stir into salad and chill.

That looks pretty good, maybe I will make it someday soon. I find it hard to come up with good tasting recipes in the heat. But I was reading your older posts, and I think you are doing great. It's not so much how much weight you lose, it's how you feel about yourself. Keep it up, you are getting towards your goals, and making a huge effort to do this. We support you!
