Lemon Garlic Chicken


An easy dinner for the last working day of the week - Happy Canada Day tomorrow!!!  Preheat oven to 350 degrees.  Cut up a lemon and peel several cloves of garlic.  Stuff lemon, garlic and a sprig of rosemary inside a chicken.  Rub a tablespoon of butter over the chicken and season with salt, pepper and dried savoury.


 

Bake in a covered roaster for one hour and then remove the lid and roast til brown (about another 45 to 60 minutes).  Let chicken rest on the cutting board while you make the gravy.  Sprinkle 1/4 c of all purpose flour over drippings in the bottom of the pan and mix together to remove any lumps.


Then turn heat on medium-high.  Add a couple of cups of chicken broth or as I did in this case, the water from boiling my potatoes.  Stir rapidly to avoid lumps while bringing it to a boil.  To add a bit of zip, I also added about a 1/4 cup of white wine.


Slice up your chicken and serve with some boiled new potatoes and the vegetable of your choice. A very tasty and effortless dinner....enjoy!
